day 108: baba ghanoush

Today I was feeling gross. Bloated and heavy. The scale seemed to disagree though. I’m down 1lb from last week! Woop Woop.

Weight: 148.4; Body Fat 30.9%

Muscle 34.1%


Hummus. Creamy, garlicky, delicious. It’s probably my all time favourite dip. My family is Lebanese so I know good hummus when I taste it. My late grandfather made, quite possibly, the world’s best hummus and he supplied it at every single family function we had. My aunts’ hummus rank a close second.

Somehow the gene required to perfect the creamy consistency and get the right garlic/tahini/lemon ratio skipped a generation (or at least it skipped over me), so I stick to the easier and almost as tasty version:

Baba Ghanoush. The OTHER Lebanese dip.

It’s often overlooked by it’s prettier, more popular relative hummus. I personally love to make it because I find it so much easier to get the right consistency and the perfect flavour (plus I don’t have to be soaking, rinsing, and boiling chickpeas for days)

Ingredients:

  • 1 eggplant
  • 1 tsp olive oil
  • 2 tbsp tahini
  • 2 tbsp lemon juice (about 1 lemon)
  • 2 cloves garlic, peeled
  • 1/2 tsp sea salt, separated
  • 1/2 tsp black pepper
  • 1/2 tsp cumin

Directions:

Preheat the oven to 400F.
Cut the eggplant in half lengthwise and rub with olive oil and 1/4 tsp sea salt. Place on a baking sheet, cut side down.

Roast in the oven for about 45 minutes, until the eggplant is soft and the flesh is browned.

Scoop out the flesh with a spoon into a food processor and discard the skin.

Add all the remaining ingredients to the food processor and whir away until it is smooth and creamy, adjusting the ingredients to reflect your taste preferences.

Serve with olive oil and a sprinkling of paprika. YUM.

  • Your baba ghanoush looks great! I actually really like eggplant and I like baba, but all the store bought ones seem to have mayo in them, which is really not my thing. I want to find one with tahini! This home made version sounds even better.

  • You know, I’ve never been able to achieve the right consistency with my hummus either. It must require a special touch! Or maybe it’s because I get my chickpeas out of a can rather than soaking it for days (wow!).

    I do love baba ghanoush too, though. The smooth smokiness goes on bread or with veggies or anything really. Yours look beautiful with the sprinkling of paprika!
