Day 15: Potato Leek Soup
Okay, so I had no progress this week. I actually took a step backward: +0.3% body fat, +0.8lb Boo
So I failed on my goals to lose 1lb and 0.5% body fat. Looking back at my caloric intake, I was eating 1900 cal per day instead of 1700 as I had planned. I did eat more vegetables and less fruit but it didn’t seem to help very much.
I feel a bit like Melissa on last night’s Biggest Loser. What did I do wrong?
This week I plan to be more strict about my calorie intake — this is going to take a bit more planning than I’m used to (primarily because I’m not used to planning). Also I’m restricting myself to 1 tbsp per day of peanut butter. This sounds like a lot, but I eat A LOT of peanut butter. I probably don’t need all that fat.
In other news…
Last night for dinner I made my famous potato leek soup. Famous to me and my husband, at least. …And I’m giving up the recipe:
Potato Leek Soup
Ingredients
- 2 tbsp olive oil
- 3 leeks chopped (white part only)
- 1/2 a red onion chopped
- 3 cloves garlic minced
- 2 new potatoes cubed
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp turmeric
- 2 sprigs of fresh thyme
- 2 bay leaves
(Yesterday I also added a can of white kidney beans, which I don’t normally add– the taste honestly didn’t change much)
Directions
Heat the oil in over medium high heat in a large saucepan.
Add the leeks, onions, and garlic and cook until the leeks are soft and the onions are transparent.
Add the potatoes and add just enough water to cover them. Stir in the salt, pepper, turmeric, thyme, and bay leaves. Bring to a boil. Reduce to low heat to simmer for 40 minutes. (If adding beans, I added them after 20-25 minutes.)
Using an immersion blender blend the soup to a smooth consistency, adding more water if necessary. (I like my soup really thick, so I never have to add extra water.)












Sorry to hear you’re disappointed in your progress. Try not to be too hard on yourself- I know that the more I think about eating healthfully, the more I crave crap. If you love PB, don’t cut back too much! Just make sure it fits within your calorie budget

Hi Samantha – I am so sorry you didn’t mean the goals you wanted. I second what Gabriela said, don’t be too hard on yourself! Cut back on something else instead of the peanut butter, if you love it.
I for one can’t wait to try the potato leek soup. I now love leeks, after reading French Women Don’t Get Fat!
I can understand your frustration :/ But remember that losing weight *does* take time, sometimes more than we’d like. But the good thing is that you’re doing in a *healthy* way, so it’s more likely to stay off in the long run!
p.s. Make sure you’re getting enough fat in your diet! Sometimes not getting enough can actually stall weight loss.
Your recipe for potato-leek soup sounds way more delicious than mine. I’m totally trading in.
Last night I made baked eggplant parmesan, served over brown rice with a tomato-spinach sauce. It was disgusting. I think I’m finished with inventing recipes on the spot.
The only way I control myself around PB is by NOT BUYING IT. I’m serious. You don’t need it! Peanuts are not even good for you! they’re highly processed and contain pesticides. What I would do is buy a small container of almond, cashew, or sunflower butter. When it’s smaller you don’t feel like you have any to spare. Might ration better. It works for me
On a happier note, the soup looks great! I’ve searched the internet for a creamless recipe and have gotten frustrated. DEFINITELY making this!

@Kenzie: Stupid me bought like 4 jars when it was on sale. I have one jar left and I’m contemplating just not opening it. I’ve never tried sunflower butter before, I’ll have to check the Bulk Barn for it.
